北海道牛奶包
北海道牛奶包(麵包機食譜)
麵包機: 象印 Zojirushi BB-HAQ10
材料:
中種麵糰
90g鮮奶 (45° C)
2g砂糖
4g(1茶匙) 乾酵母 (Lowan instant dried yeast)
80g淡忌廉
200g高筋麵粉(strong bread flour)
8g砂糖
主麵糰
30g蛋
20g砂糖
3g(1/2茶匙) 鹽
(中種麵糰)
50g高筋麵粉(strong bread flour)
做法:
一) 將暖牛奶放入麵包機內盆,加2g砂糖拌勻,加乾酵母,侍兩分鐘,拌勻,靜置八分鐘,待出現氣泡備用。
二) 餘下中種麵糰材料依序加入麵包機內盆,或按麵包機指示放入材料,選擇"dough",完成後靜置發酵至兩至兩倍半,取出中種麵糰。
三) 順序放下主麵糰材料,攪拌五分鐘後,檢查麵團會否過乾或過濕。如果太濕的話,可加一湯匙麵粉。太乾,加半茶匙牛奶。每次加一湯匙麵粉或半茶匙牛奶,觀察麵團濕度,決定是否再添加麵粉或牛奶。
四) 選擇”basic/white”,”500g/1 pound”,"light/低黃金度"。
五) 完成程序後,麵包脫模,待涼切片。
成績:
很鬆軟,筋度十足,可惜沒有期待的牛奶或忌廉味道,可塗果醬或做三文治,光吃麵包也不錯。一次吃不完,涼透放入密實盒,第二天仍很鬆軟呢,第三天如何就不知道,因為到了第二天全都吃光了。
主麵糰裡糖的份量比原食譜少了10g,因為這款象印麵包機,沒有"甜包"選擇,故少放點糖,選擇"light",以防外皮過燶。
貼士: 先把酵母加暖糖水拌勻,待十分鐘,再添加餘下材料,可令麵包鬆軟可口。中種麵糰搓揉成糰

放入所有主麵糰材料
搓揉成糰
開始發酵
完成第三次發酵,表面塗上牛奶
焗好了!
